The story behind delight.fuel 

Hello there. I am Julia. I’m a vocationally trained cook from Austria, food nerd and lover of fitness. My goal is to help people achieve complete health and wellbeing by sharing my knowledge of healthy living and clean cooking with fresh and whole foods. 

I have always had a passion for food and cooking growing up because my mum, who is an amazing cook, taught me how to create delicious food. It wasn’t until four years ago when I was diagnosed with the thyroid autoimmune disease Hashimoto’s that I fell in love with clean cooking. Hashimoto’s is an autoimmune condition which often comes with a lot of other issues such as food sensitivities and gut related problems. This was more or less the beginning of my food journey to heal my gut and regain complete health and control over my own life. In summer 2016 I sought the advice of a holistic hormonal specialist to help me find some answers. Unfortunately there is no recognized cure for these issues, but there is hope. One piece of advice she gave me was to leave gluten and dairy out of my diet. I started intensive research into thyroid disease and other conditions related to food diet and nutrition and learned how important it is to know where food comes from and what we put into our bodies. 

With my culinary background I began experimenting with foods such as vegetables, fruit, healthy fats in the form of coconut, olive, avocados, nuts and seeds, grass-fed/pastured/organic meat and eggs. All the recipes I create are unprocessed, free from gluten, dairy and refined sugar. Here and there I also use gluten free grains and legumes that my stomach does not hate me for such as (brown rice, chickpeas and quinoa). The mission of delight.fuel is to share recipe creations that inspire others to eat healthy, feel good about what they are eating, and most importantly nourish their bodies with delicious, natural food.

This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.

Recipe: 
Hazelnut Milk
1 cup roasted hazelnuts
Water, filled to the minimum line of the Almond Cow

Truffles
160 ml freshly made hazelnut milk
1shot espresso (or strong brewed coffee)
½ cup finely ground hazelnuts
1 cup dairy-free chocolate chips
1 tbsp coconut oil

Coating
1 cup dairy-free chocolate chips
Chopped hazelnuts (optional)

Instructions
Make the hazelnut milk: Process hazelnuts and water in the Almond Cow. Measure 160 ml milk for the recipe; refrigerate the rest for later use.

Prepare filling: Heat hazelnut milk and espresso until hot (not boiling). Pour over chocolate chips and coconut oil; let sit 2-3minutes, then stir until smooth. Fold in ground hazelnuts. Chill until firm, up to 3 hours.

Shape & coat: Roll into truffles and freeze for 2 hours. Melt remaining chocolate, dip truffles, and garnish if desired. Let set before serving or storing. Enjoy!
