As a chocolate fanatic, brownies are probably one of my favorite desserts. I love all sweet things but when there is lots of chocolate involved I get especially excited. This recipe turned out perfectly, and these delicious energy boosting paleo brownies are the real deal. No seriously, you won’t believe how good they are! They have that rich dark chocolate punch plus a secret ingredient.

In the past couple years I have been experimenting with different brownie recipes to fit my dietary needs quite a bit, but never have I nailed one recipe like this one. Don’t get me wrong I stand by the brownies I’ve made in the past, and if you’re looking for date sweetened desserts only my delicious sweet potato brownies are a winner; but these really take the cake.

How to make the perfect paleo brownie:
- For that perfect brownie crackle on top you need to create air bubbles in your batter. You can achieve that by beating your eggs and coconut sugar on high for several minutes. The mixture will become fluffy and increase in volume. This is the most important step.
- To achieve that extra fudge factor you can fold in stevia sweetened/unsweetened chocolate chips into your batter after your batter is combined. I made these brownies with and without chocolate chips and trust me, you want to add those chocolate chips 😛
- To make the perfect brownie, I would recommend using dark chocolate. Personally I like to incorporate unsweetened chocolate since the coconut sugar gives enough sweetness already but if you prefer using stevia sweetened/sweetened chocolate, go ahead.

Energy boosting Paleo Brownies
These brownies have a perfect, super fudgy and gooey center complimented by a rich chocolate flavor and topped of with a boost of java
Ingredients
- 3 eggs
- 1/2 cup coconut oil
- 1/4 cup almond flour
- 3 tbsp gluten free cassava flour
- 2 tbsp cacao powder
- 1 cup coconut sugar
- 2 tbsp perk coffee supplement (mix 1 scoop with 2 tbsp of water)
- 5.5 oz chocolate (unsweetened/stevia sweetened)
- 1/3 cup chocolate chips (paleo/stevia sweetened)
- pinch of salt
Instructions
- Preheat oven to 325 degrees Fahrenheit. Line a 9 inch brownie pan with parchment paper.
- In a small sauce pan heat coconut oil and chocolae over low heat until fully melted and combined. Set aside.
- In a medium sized bowl mix eggs and coconut sugar with a hand mixer. Beat on high for about 3-5 minutes until eggs mixture has become more fluffy. With a spatula stir in almond flour, cassava flour, cacao, coffee and salt. Carefully stir until combined.
- Add in cooled down coconut oil/chocolate mixture and stir until combined. Fold in chocolate chips.
- Pour batter into the parchment paper lined brownie pan and bake for about 35 minutes. Test batter with a toothpick. You should see moist crumbs.
- Take out of the oven and let cool. Cut into either 16 small or 9 bigger squares. Enjoy while still warm. Store leftovers in an airtight container for up to two days.
