Vegan Peppermint Hot Chocolate

My vegan peppermint hot chocolate is a healthy version of an all-time favorite holiday beverage. It’s rich and creamy and is the perfect treat for peppermint lovers to warm up with on a cold winter day without feeling full afterwards. As always this recipe is dairy-free and naturally sweetened.

Peppermint Hot Chocolate

This year has gone by so fast and I can’t believe it’s almost December. I’ve been quite busy working on loads of recipes for the upcoming holidays, so while I do that, I wanted to talk about this all time favorite go-to.  This recipe is really just too good to wait until Christmas, so I think November will have to do. Whether I’m looking to warm up on a relaxing winter day, or wind down from a fun day full of skiing and sledding, I’m always thankful to find a homemade batch in the refrigerator.

It takes about 5 minutes to prepare from scratch and consists of nutritious ingredients only. That’s a good thing because it means I don’t have to feel guilty when I start gulping this down once or twice a week :P.  You will be able to find this classic holiday beverage in tons of cafes or restaurant around this time of year, but most of them have one thing in common…they are full of dairy and refined sugars D: Don’t give into that temptation! Once you try this, you’ll fall in love and thank yourself for doing it.

How to make a perfectly healthy peppermint hot chocolate:

  • to prepare the plant-based milk you can use oats, coconut, hazelnuts, almonds, cashews etc. I used to prepare this with almonds, however, I only use cashews when I make this recipe now. They make the milk very creamy, have a neutral flavor, and won’t change the taste when heating up the milk. Almonds tend to taste quite different when cooked, and if you burn them, they will taste like cardboard. If you ever order a latte with almond milk at a cafe and it tastes like that, well…now you know why!
  • Instead of using any sugars or even maple syrup, add dates. They can be easily incorporated by blending them as you make the milk and they add a natural pure sweetness. Want the final drink to be sweeter?  just add more dates. Play around with it to get a level of sweetness that you like.

Sounds pretty simple, right? If you are a hot chocolate lover and want to use wholesome ingredients, this recipe is a winner.

Ingredients

  • 1 cup cashews (other nuts will do as well)
  • 8 cups of water
  • 1/2 oz unsweetened chocolate
  • 3 tbsp cacao powder
  • 4-5 medjool dates (pitted)
  • 1/4 tsp peppermint extract

Instructions

    Method with Almond Cow
    To prepare your cashew milk place cashews into your basket. Add 8 cups of water into your Almond Cow, assemble and press the button.

    Transfer your cashew milk into a high speed blender. Add the rest of the ingredients to the milk and blend for about 2 minutes until dates and chocolate are fully dissolved. Transfer to a jar and store in fridge for up to 4 days. Enjoy hot with a pinch of coconut cream.

    Method with Blender:
    To prepare your cashew milk soak cashews in water for about 8 hours. Drain, wash and place into a high speed blender. Add 4 cups of water and blend at high speed for about 1 minute. Drain through a fine sieve or a cheesecloth.


    Transfer your cashew milk into a high speed blender. Add the rest of the ingredients to the milk and blend for about 2 minutes until dates and chocolate are fully dissolved. Transfer to a jar and store in fridge for up to 4 days. Enjoy hot with a pinch of coconut cream.
