The last few days in self quarantine I have had some extra time on my hand so I decided to go through my old recipes and found this paleo chocolate mug cake. Even though I remember it being super tasty, I decided to make it again with a few changes…and Holy Moly it’s like no other mug cake out there.
Absolutely moist, fluffy and the best chocolate flavor imaginable.
You might be skeptical, and I get that. Why exactly is this mug cake so so much better? Well, let me tell you about one of my secret weapons when it comes to baking. I absolutely love using ROASTED NUTS in my desserts. They make everything taste sooo much better. If you don’t believe me, try it next time you make a recipe that calls for any sort of nuts or almond flour. Just use ground roasted nuts instead. You will see 🙂
The last time I made these paleo chocolate cakes I used almond flour but this time I swapped it out with ground roasted hazelnuts.
The best decision I’ve ever made 😛 a delicious nutty hazelnut flavor with the perfect dark chocolate finish. The perfect combo if you ask me. Don’t miss out on it!
Can I make this chocolate mug cake in the microwave?
Yes, you can microwave these chocolate mug cakes for about 11/2 to 2 minutes. Personally I prefer to bake them in the oven for about 15-20 minutes just because I don’t microwaving my food when I don’t need to, however, I have tried it before and they came out just as perfect.

Chocolate Mug Cake
Craving a delicious, healthier chocolate cake that takes less than 30 minutes to make? Try these delightful and decadent paleo chocolate mug cakes. With only 5 main wholesome ingredients they are so easy to make and ready in no time. A perfect single serving dessert.
Ingredients
- 3/4 cup roasted ground hazelnuts (sub with almond flour)
- 6 tbsp unsweetened cacao powder
- 6 tbsp homemade maple syrup (or date syrup)
- 3 tsp coconut oil
- 3 eggs (substitute with chia eggs if preferred, 3 tbsp chia seeds, 9 tbsp nut milk)
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- Optional: 2 oz chocolate (melted)
Instructions
1. Preheat oven to 375F and grease 2 ramekins (4 inch) or mugs with coconut oil.
2. If using chia eggs whisk chia seeds and nut milk together and let sit for at least 10 minutes.
3. Add all ingredients including the eggs in a medium sized bowl. Whisk well and pour batter into the ramekins
4. Bake in oven for about 15-20 minutes until mug cakes are cooked through and serve while still warm. *
5. Dust with powdered monk fruit sweetener and drizzle melted chocolate on top.
Optional: If you are in a rush, microwave each cake for about 1 minute and 40 seconds.
Notes
*If preferred, you can microwave the cakes for about 1 1/2 - 2 minutes.
