How to make vegan protein pancakes
- In a large bowl mix together oat flour, protein, baking powder, baking soda, and salt. Add cashew milk, maple syrup, and apple cider vinegar, and then whisk the batter well until smooth with no clumps remain.
- Heat a frying pan over medium to high heat. When the pan is hot pour ¼ cup of the batter into the middle of the pan. Personally I prefer to use my bigger ice cream scoop to achieve consistency in size and shape. Cook for about 1-2 minutes, then flip and cook on the other side until both sides are golden brown.
- Repeat until all of the batter is gone, and top everything off with fresh fruits, yogurt, and/or maple syrup.
