I’ve been craving fruity bakeries all summer but somehow I haven’t gotten around to it and ended up creating lots of chocolatey treats.
So now summer is basically over, it’s fall and here we are. I made some deliciously fluffy lemon blueberry muffins :P. It’s still pretty hot outside so I’m sure I can get away with it, am I right? Plus these yummy guys are deliciously light and packed with lots of blueberry lemon flavor. So freaking good.

How to prepare these tasty collagen lemon blueberry muffins:
Preheat oven to 350 Fahrenheit and line a muffin tin with parchment liners.
In a large bowl add blanched almond flour, tapioca flour, collagen, baking soda, and baking powder. Mix until combined.
In a separate bowl add eggs, maple syrup, lemon zest, lemon juice and coconut oil. Whisk until combined.
Add wet ingredients into dry ingredients and combine until no clumps remain.
Fold in blueberriers and mix until combined.
Scoop batter into the lined muffin tin and bake in the oven for about 20-25 minutes or until toothpick comes out clean.
Let cool for about 5-10 minutes before servings. Store leftovers in an airtight container for up to three days. ENJOY!

- 2 1/4 cup almond flour
- 1/4 cup tapioca flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 scoop (2 tbsp) collagen powder
- 1 tbsp lemon zest
- 1/4 cup lemon juice
- 3 organic pasture raised eggs
- 1/3 cup maple syrup
- 1/3 cup coconut oil, melted and cooled
- 1 cup organic blueberries
Instructions
