Autumn is in the air! And with it comes the irresistible aroma of pumpkin spice, making me crave all things pumpkin. Today, I am introducing a super easy, delicious and nutritious treat. Perfect for those busy mornings or an afternoon pick-me-up.
What you need to prepare these incredibly delicious granola bars:
For these granola bars, I used Bob’s Red Mill organic protein oats which have 3 more grams than your regular rolled oats. To keep them simple I added organic pumpkin seeds, cranberries and dairy-free chocolate chips.
For a seasonal touch I used pumpkin spice and pumpkin puree. Feel free to add other fall spices e.g. additional cinnamon.
To keep them refined sugar-free and no-bake I used a mix of maple syrup, almond butter, and coconut oil.
These No-bake Pumpkin Granola Bars are the perfect embodiment of fall flavors without the fuss of baking. They’re not only delicious but also packed with nutrients, making them a guilt-free snack. They also pack more protein than your usual granola bar using Bob’s Red Mill Protein Oats which have 3 grams more protein than regular rolled oats.

No-bake Pumpkin Granola Bars
No-bake Pumpkin Granola Bars: A delightful fusion of hearty protein oats, creamy pumpkin puree, and fall spices, these bars offer a quick, nutritious snack without the oven fuss.
Ingredients
- 3 cups organic gluten-free protein oats
- 1/2 cup pumpkin seeds
- 1/2 cup cranberries
- 1/2 cup chocolate chips
- 1 1/4 tsp pumpkin spice
- 1/4 cup pumpkin puree
- 1/4 cup coconut oil, melted
- 1/2 cup almond butter, unsweetened
- 1/3 cup maple syrup
Instructions
- In a large bowl combine oats, pumpkin seeds, cranberries, chocolate chips and pumpkin spice.
- In a separate medium sized bowl add almond butter, maple syrup, pumpkin puree and coconut oil. Mix until well combined.
- Add wet ingredients into dry ingredients and stir until well combined. Transfer mixture into a 8x8 lined brownie pan. Press down gently to firm.
- Transfer into the freezer for about 1 hour before slicing.
- Store bars in an airtight container in the refrigerator for up to one month.
