Between the endless energy of two toddler boys and the need for quick snacks, my freezer is rarely without popsicles. I especially love feeding my children homemade treats that are good for them. That’s why these vibrant, juice-based popsicles have quickly become a staple in our house. We absolutely love these as our afternoon treats when we need a cool-down.
If you’ve been hanging around Delight Fuel for a while, you know I’m passionate about creating healthy treats. Usually, that involves blending dates, cashews, and cacao for rich desserts. Sometimes though, you just crave something light, fruity, and incredibly refreshing.

These Homemade Veggie Fruit Popsicles feature natural sweetness from apples and oranges. Meanwhile, raw beets and carrots sneak in a fantastic dose of veggies and result in stunning colors. The best part is they are entirely dairy-free, gluten-free, and contain absolutely zero added sugar!Below, you will find the standard juicer method. I also included a simple alternative guide if you only have a blender on hand.

Method 1: The Juicer Method
- Prep the produce: First, wash, peel, and chop all ingredients. Make sure the pieces fit easily through your juicer’s chute.
- Juice: Next, run the beets, oranges, apples, and carrots through your juicer. Then, stir the collected juice to mix the flavors and colors evenly.
- Pour: Carefully pour the fresh juice into your popsicle molds. However, leave about ¼ inch of space at the top. The liquid will expand slightly as it freezes.
- Insert sticks: Finally, secure the lids and insert the popsicle sticks into the molds.
- Freeze: Place the molds in the freezer for 4 to 5 hours until completely solid. Afterward, run the molds under warm water for a few seconds to release the popsicles.

Method 2: Alternative Blender Guide (No Juicer Required)
If you lack a juicer, you can still easily make these popsicles. Simply use a standard or high-speed blender and a strainer.
- Chop everything smaller: First, chop the beets, carrots, and apples into bite-sized pieces. This helps the blender blades catch them easily.
- Blend with a liquid base: Next, add all the prepped ingredients to your blender. Pour in ½ cup to 1 cup of water or coconut water to get the blend moving. Blend on high until completely smooth.
- Strain the mixture: Place a nut milk bag, cheesecloth, or a fine-mesh sieve over a large bowl. Then, pour the blended puree into the strainer. Squeeze or press firmly to extract all the liquid, and discard the remaining pulp.
- Freeze: Finally, pour the extracted juice into your popsicle molds. Insert the sticks and freeze for 4 to 5 hours.
Pro-tip: Do you want a creamier, more filling “smoothie pop”? You can skip the straining step entirely! Just blend everything perfectly smooth and pour the puree directly into the molds.

- 2-3 medium oranges, peeled and separated into segments
- 2-3 medium apples, cored and sliced
- 2-3 medium carrots, washed, peeled, and chopped
Instructions
Juicer Method
1. Prep the produce: Ensure all your ingredients are washed, peeled, and chopped into pieces small enough to fit through your juicer's chute.
2. Juice: Run the beet, oranges, apples, and carrots through your juicer. Stir the collected juice to ensure the flavors and colors are evenly mixed.
3. Pour: Carefully pour the fresh juice into your popsicle molds. Leave about ¼ inch of space at the top of each mold, as the liquid will expand slightly as it freezes.
4. Insert sticks: Secure the lids and insert the popsicle sticks.
5. Freeze: Place the molds in the freezer for 4 to 5 hours, or until completely solid.
6. Enjoy: Run the outside of the molds under warm water for a few seconds to easily release the popsicles.
Blender Method
1. Chop everything smaller: Because a blender processes differently, chop your beets, carrots, and apples into smaller, bite-sized pieces so the blades can catch them easily.
2. Blend with a liquid base: Add all the prepped ingredients to your blender. You will likely need to add ½ cup to 1 cup of water or coconut water to help the blades get moving. Blend on high until completely smooth.
3. Strain the mixture: Place a nut milk bag, cheesecloth, or a fine-mesh sieve over a large bowl. Pour the blended puree into the strainer and squeeze or press firmly to extract all the liquid. Discard the pulp (or save it to mix into muffins or compost it!).
4. Freeze: Pour the extracted juice into your popsicle molds and freeze for 4-5 hours as directed above.
