Hello my friends and welcome back. Plan accordingly, because this crunchy and tasty salted tahini caramel granola will knock your socks off. It is not only vegan but also gluten-free and refined sugar free. Pour some delicious plant based milk or coconut yogurt on top and you got yourself a decadent, wholesome breakfast dream.
To some people caramel granola might sound crazy but it actually works. When I was coming up with this recipe, it was a little bit of an experiment, but I’m happy to report a stunning success 😛 When making Granola you usually use your brown sugar, honey or maple syrup. Well let me tell you, adding tahini caramel brings this granola to a whole new level of impossible goodness. The sweet and salty tahini flavor goes so well with any plant-based milk and you’ll need to use some serious self control to not eat the whole batch.
When friends and family come to my house for breakfast or brunch, they can be certain I will serve some delicious Granola. I try to come up with a new recipe every month or so and my husband loves it since it usually ends up in his lunchbox, but I need to give you all a fair warning! Granola will have more calories than a simple bowl of oatmeal or chia pudding, so be aware when you serve yourself some for breakfast. I would advise using this as a topper to a healthy base. I usually make my base out of extra chia, flax seeds, oatmeal, oat milk, and of course some fresh berries. Use this strategy so you don’t feel overly full and most importantly your delicious Granola will last you for a while.
What makes the perfect tahini caramel Granola?
First you will need the tahini caramel. The recipe is actually really simple. You just have to mix together coconut oil, maple syrup, date syrup and tahini paste and heat it over low whisking until it looks like a caramel.
Then you just need some simple granola ingredients (which are probably stored in your pantry anyway) such as oats, pumpkin seeds, sesame seeds, nuts, shredded coconut etc. Mix it with the caramel and bake for about 45 minutes until evenly browned.
If you dont have the tahini caramel or the ingredients to make it, substitute with a nut butter instead of the tahini paste. It won’t have the same unique flavor but you can never go wrong with some delicious almond butter (my personal fave).
