They are decadently rich, creamy, and will melt in your mouth. It’s the perfect treat to munch on for this year’s Easter celebrations.
With Easter just around the corner, I decided to put together a little round up of easter treats for you. These decadent rich hazelnut butter and chocolate eggs filled with buckwheat are the first of several recipes I wanted to share.
When it comes to hazelnut chocolate, I am in love. Any recipe that includes this flavor combination has me sold! These nutty eggs are definitely one of my favorite recipes thanks to this amazing combo. The secret lies in the delicious homemade hazelnut butter. The roasted hazelnut flavor mixed with dark chocolate is an absolute dream, seriously, it’s going to blow you away.
How do I prepare these hazelnut chocolate eggs?
- first off, you will need an easter egg mold. I ordered mine off Amazon, but I’m sure you’ll be able to find one at a target or in other grocery stores during easter holidays.
- to prepare the hazelnut butter, make sure to roast the hazelnuts beforehand. I say this all the time, but roasted nuts just make everything SO much better. To process the nuts you will need a high speed blender or food processor. It takes between 5-10 minutes depending on what kind of machine you use.
- for the chocolate I used stevia sweetened chocolate chips, but you can use regular semi-sweet or unsweetened chocolate as well.
- to add extra crunch I mixed in some buckwheat but you can either use chopped nuts or leave it out completely, but I would recommend giving it a try! My husband loves the texture the buckwheat gives to the chocolate.

Vegan Hazelnut Chocolate Eggs

They are decadently rich, creamy, and will melt in your mouth. It's the perfect treat to munch on for this year's Easter celebrations.
Ingredients
- 1 1/2 cup hazelnuts
- 6 oz unsweetened/stevia sweetened chocolate
- 1 tbsp coconut oil
- 1/3 cup buckwheat
- 2-3 tbsp maple syrup (if using unsweetened chocolate)
Instructions
1. Preheat oven to 350F and line baking sheet with parchment paper.
2. Place hazelnuts onto the baking sheet, roast in the oven for about 10 minutes and let cool.
3. Melt chocolate and coconut oil in a small sauce pan over low heat and set aside.
4. In a food processor or high speed blender add roasted hazelnuts and process until completely smooth. This will take about 5-7 minutes.
5. Add melted chocolate and maple syrup (optional) and process until combined.
6. Transfer into a measuring cup and fold in buckwheat.
7. Fill easter egg molds with mixture and freeze for about 30 minutes until chocolate eggs have set. Repeat process until all of the hazelnut chocolate mixture is gone.
8. Store in an airtight container in the refrigerator.
