Peanut Butter Rice Crispy Treats

These deliciously crispy peanut butter and rice treats are made with a few healthy ingredients in under 15 minutes. They are also no-bake, gluten-free and taste so much better than the original.

If you love peanut butter you will be obsessed with these delicious no-bake Peanut Butter Rice Crispy Treats. They are crunchy, rich and incredibly easy to prepare. Just a few simple ingredients and 15 minutes of your time.

Peanut Butter Rice Bars

How to prepare these yummy crispy treats:

  1. In a small saucepan add peanut butter, maple syrup and coconut oil. Heat over low until fully combined.
  2. Transfer into a medium-large sized bowl. Fold in puffed rice until combined.
  3. In a 8×8 lined brownie pan add rice peanut butter mixture. Spread evenly, then transfer into the freezer for about 1-2 hours.
  4. Melt chocolate and coconut oil over low heat until fully melted.

Peanut Butter Rice Crispy Treats

  1. Once the peanut butter mixture has hardened, take out of the freezer.
  2. Pour melted chocolate over the mixture and put back in the freezer until chocolate has hardened for about 20-30 minutes.
  3. Slice into 16 even squares, sprinkle with flakey sea salt and enjoy.
  4. Store leftovers in an airtight container in the fridge.

Ingredients

  • 1 cup peanut butter
  • 1/2 maple syrup
  • 3 cups puffed brown rice
  • 2 tbsp coconut oil

top layer

  • 1 cup chocolate chips, stevia sweetened
  • 1-2 tbsp coconut oil

garnish

  • flaky sea salt

Instructions

1. In a small saucepan add peanut butter, maple syurp and coconut oil. Heat over low until fully combined.

2. Transfer into a medium-large sized bowl. Fold in puffed rice until combined.

Save this recipe
1 cup cashews, soaked
1 can coconut cream, unsweetened 
5 medjool dates, softened with boiled water
1 Bourbon Vanilla bean 
1/3 cup chopped chocolate, dairy-dree

1 1/2 cup chocolate chips, dairy-free
1-2 tbsp coconut oil

In a blender or food processor add cashews, coconut milk, vanilla and dates. Process until smooth! Once the mixture is cool enough, stir in chopped chocolate. Transfer into ice cream bar mold. Freeze for 2-3 hours. Melt chocolate with coconut oil. Coat vanilla chocolate bars in chocolate mixture. Put back in freezer for 5 min. Enjoy! Dairy-free. Refined sugar-free. Coffee chocolate c Dairy-free. Refined sugar-free. Coffee chocolate chip Klondike bars — made from scratch and ridiculously good. ☕🍫🍦 Creamy coffee ice cream, melty chocolate chips, and that signature crackly shell… but cleaner. My recipe, and trust me, you need it. 👇 

Recipe:
1/2 cup cashews, soaked in hot water for 1-2 hours
1 can coconut cream or milk
4-5 medjool dates, soaked in hot water for 10 minutes, drain
Double shot espresso , sub with 1 tbsp instant coffee
2 tbsp cashew butter, sub with any nut butter
1/3 chopped chocolate chunks, I used @hukitchen 
1 cup chocolate chips, melted in a bowl with chopped nuts! I used almonds! 

In a blender add all ingredients except for the chocolate chunks and almonds and blend until smooth. Fold 1/3 cup chopped chocolate chunks and pour in your preferred ice cream mold. Freeze for 3-4 hours. melt chocolate, mix in chopped almonds. Dip ice cream bars in melted chocolate and let sit until fully hardened. Store in freezer! Enjoy! #dairyfreerecipes #klondike

1 cup dairy-free milk, unsweetened

5-6 frozen strawberries

In a blender or food processor add all ingredients . Process until smooth! Transfer into ice cream bar mold. Freeze for about 2-3 hours. Melt chocolate: Coat bars in chocolate mixture and sprinkle with freeze dried strawberries Put back in freezer for 5 min. Enjoy! Layers of creamy caramel ice cream, gooey caramel, and a crisp chocolate shell… all without dairy or refined sugar. Yes, it is possible — and yes, you need to try them. 🙌

Perfect summer treat ☀️ → save the recipe below.

Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

No dairy. No refined sugar. Just pure summer joy in every bite. 💫
Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
