What is so great about chickpea flour?
Chickpea flour is not only gluten-free but also rich in vitamins and minerals. It is packed with fiber, affects your blood sugar less than wheat flour and has fewer calories than regular flours.
How to prepare these delicious cookies:
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
In a medium sized bowl whisk together organic pasture raised eggs, coconut sugar and melted coconut oil until smooth. Set aside.
In a separate bowl combine chickpea flour, baking soda, reishi cacao (optional) and salt.
Add dry ingredients into wet ingredients and mix until combined. Fold in chocolate chips.
Use an ice cream scoop to scoop out dough and roll into a ball between your hands. Place on a parchment paper lined baking sheet and flatten the dough a little bit. Bake for about 10-12 minutes and set aside to cool. ENJOY.

Ingredients
- 1 ½ cups chickpea flour
- ½ cup coconut sugar
- ⅓ cup coconut oil, melted
- 1 tbsp organic unsweetened cacao, optional
- 2 organic pasture raised eggs
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup stevia sweetened dark chocolate chips (sub with semi-sweet chocolate chips)
Instructions
